A soft, floral gin built around rose petals and chamomile, with juniper and coriander holding the structure and a lift of dried lemon peel keeping it bright. Inspired by a family recipe and adapted into a dry botanical blend that ships anywhere in Australia, ready to run on your air still.
This is gin in a gentler register. Rose leads on the nose with chamomile underneath, the citrus comes through clean rather than sharp, and the orris and angelica root give the spirit a rounded weight without weighing it down. Pairs particularly well with elderflower tonic, a slice of pink grapefruit, or simply soda and ice on a warm Brisbane afternoon.
Botanicals are split across bag A and bag B, with the juniper and coriander packed separately so you can crack them before adding to the boiler without disturbing the rest of the kit.
Available as a 30g, 60g or 90g kit, sized for a 1L, 2L or 3L charge in your air still.
Designed for use with a charge proofed down to 40% ABV after a warm maceration in 50% spirit.
Optional fresh addition: Slice 25g of fresh cucumber per litre of charge into the boiler alongside the dry botanicals for a greener, more cooling profile closer to the original family recipe.

Quick overview:
- Crack (don't crush) the juniper berries and coriander seeds from bag A. A light press with a rolling pin or mortar and pestle is enough to split the husks and expose the oils. If you don't have either, an empty wine bottle works just as well.
- Add the contents of bag A and bag B to the boiler of your air still, then add your base spirit at 50% ABV (1L, 2L, or 3L depending on your kit size). If using fresh cucumber, slice and add now.
- Bring the boiler up to 50°C, then turn off the power and leave the botanicals to macerate for 2 hours with the lid on.
- Proof down to 40% ABV by adding water. For a 1L kit add 250ml, for a 2L kit add 500ml, for a 3L kit add 750ml.
- Run the still and discard the first 50ml as foreshots.
- Collect the main run into a single vessel, switching to small jars (around 100ml each) once you notice the spirit running thinner. Stop when the distillate tastes watery or the flavour drops away.
- Taste each jar separately, then blend to your preference. Dilute the final blend to your chosen bottling strength (40 to 46% ABV is typical for gin).
